Butter chicken

This cold front that suddenly approached us in the Cape made me crave a warm hearty meal and the crew requested my famous “Butter chicken and white rice” for supper. It’s a super easy and quick dinner idea that’s a favourite in my household and partnered with that Fair Cape Dairies sent me some lovely dairy products to put to use and create a #rationfriendly meal idea.

Ingredients
  

  • 5 Filleted chicken breast, cubed
  • 250 ml Fair Cape Dairies fresh cream
  • Butter chicken cook-in sauce
  • Olive oil to sauté cubed chicken breasts
  • 1 Onion, chopped and chillies (optional)
  • Fresh, chopped coriander for taste (optional)
  • Salt
  • You can also add potatoes or sweet potatoes to bulk up the meal

Instructions
 

  • Sauté chicken cubes in olive oil until golden brown.
  • Add salt and any extra spices you want to add, simmer for a couple of minutes.
  • Add cook in sauce and cream and cook until sauce becomes thick in consistency.
  • Garnish with coriander for added flavour.
  • Serve with white, brown or basmati rice.
