Tangy Meat and Rice Loaf Recipe

Rice, vegetables, mushrooms and yoghurt not only stretch ground beef, but also lend flavour to this meatloaf

Ingredients:

  • 450g lean ground beef
  • 1 cup cooked rice
  • 1 egg
  • ¾ cup plain Fair Cape Free Range Yoghurt
  • ½ cup finely chopped onion
  • ½ cup finely chopped greenpepper
  • 1 can sliced mushrooms, drained
  • 1 Tablespoon salt
  • ¼ teaspoon ground black pepper
  • Tomato and onion slices (optional)

Preparation:

Combine ground beef, rice, egg, yoghurt, onion, greenpepper, mushrooms, Worcestershire sace, salt and pepper.

Shape into a round loaf, place on rack in shallow pan. Bake at 220 degrees for 55 minutes.

Top with tomato and onion slices.

Bake 5 minutes longer

Yield: 6 Servings
